Recipe: Grilled Peach & Goats Cheese Salad

Peaches are one of my favourite fruits. I love to try and incorporate them into my meals however I can. One recipe that I have discovered is a lovely, healthy recipe that makes this sweet fruit a little more savoury and its perfect for the summer months.

Grilled Peach & Goats Cheese Salad


Ingredients


For the salad:

4 ripe peaches
Half a log of goats cheese
Handful of hazelnuts
1 bag of mixed salad leaves

For the dresssing:

4 tablespoons of olive oil
2 tablespoon of balsamic Vinegar
1 table spoon of whole grain mustard
Salt
Pepper

Method


Step 1: First, to remove the skins from the hazelnuts place them on a baking tray and roast them in the oven for 10 minutes. After removing them from the oven, let them cool, then place in a towel and rub them, the skins should easy come off. Then chop them into small pieces

Step 2: Get your peaches and cut them into quarters, removing the stone. Brush a small amount of oil on the top and place under a grill until they turn charred and golden brown.

Step 3: While the peaches are roasted, prepare the dressing by whisking the balsamic vinegar, mustard and olive oil together until emulsified. Then add a sprinkling of salt and pepper.

Step 4: When the peaches are fully grilled, remove them from the grill and place on top of your lettuce and crumbling the goats cheese on top. Drizzle over your salad dressing and some of the hazelnuts on top for an extra crunch.
